  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup shredded coconut
  • 1/4 cup maraschino cherry juice
  • 1 cup maraschino cherries, halved
  • Additional powdered sugar for rolling

In a mixing bowl, beat together the butter, powdered sugar, and vanilla until creamy. Add the flour and coconut and mix until well combined. Stir in the cherry juice. Roll the mixture into 1-inch balls and press a cherry half into the center of each ball. Roll the balls in powdered sugar and place them on a baking sheet. Chill until firm. These cookies are so delicious and make a great addition to any holiday cookie tray.
