Coming up with creative ways to get my family to eat their veggies isn't easy. We have a few standard side dishes for dinner, the same old go-to foods. It gets a little boring. She had them both cooked and ready to eat in less than 10 minutes!
Of course, we had to sample them first to see. Soooooooooo good! The cauliflower risotto is the perfect mix creamy richness and savory parmesan. And the mashed butternut squash is so full of flavor and a hint of sweetness, it tastes like fall on a fork.
Dinner time, and time to find out what the two vegetable advert members of my tribe think of the new side dishes. After a few fork circles and a squinty-eyed inspection of the sides, they each sampled a bite. And then another, and another. The verdict is in……..Two thumbs up, hooray! I'm excited I can add these tasty side dishes to my grocery list, it makes meal planning much easier. Nutritious options that are quick and convenient are what every mom wants to see more of, right?
