My family loves when I make their favorite take-out meals for dinner. I like to try and recreate the dishes they love at home, because it’s less expensive and usually a lot healthier that way. This spring roll recipe is full of flavor and perfect for a quick weeknight dinner or a delicious party dish when you’re entertaining a crowd.

Plus, it’s easy to cook and so versatile, so I can use it in my family’s favorite dishes, whether it’s Taco Tuesday or just a Friday meal on the fly. Crispy Pork and Vegetable Spring Rolls

This spring roll recipe takes less than thirty minutes to make in the pressure cooker. Simply dice the Smithfield Marinated Fresh Pork Loin Filet, sauté it up, add the other ingredients, and cook in the pressure cooker for a couple of minutes. Stuff your spring roll wrappers, pop them in the oven and you’re all done.

Crispy Pork and Vegetable Spring Rolls Recipe

Servings: 4 servings

Prep time: 15 minutes

Cook time: 10 minutes

Total time: 25 minutes

 Ingredients:

  • 1 lb. Smithfield Roasted Garlic & Herb Marinated Fresh Pork Loin Filet, diced
  • 3 tablespoons soy sauce
  • 1 clove garlic, minced
  • 1 tablespoon fresh grated ginger
  • 1 teaspoon red pepper flakes
  • 1/8 cup chopped green onion
  • 3 tablespoons of rice vinegar
  • 4 cups of shredded cabbage
  • ½ cup of shredded carrots
  • egg roll wrappers

Instructions:

  1. Press sauté on pressure cooker and heat up. Add diced pork and 1 tablespoon of soy sauce. Sauté until pork is brown and fully cooked, to an internal temperature of 145 degrees. Turn pressure cooker off.
  2. Add cabbage, carrots, garlic, ginger, red pepper flakes, green onion, rice vinegar and remainder of soy sauce. Stir everything and seal pressure cooker.
  3. Set pressure cooker on manual, high pressure for 2 minutes.
  4. When timer ends, perform a quick release and allow to cool.
  5. Preheat oven to 400 degrees.
  6. Arrange egg roll wrapper. Spoon 2 tablespoons of pork mixture onto center. Fold bottom corner over, then sides, and finally top corner to seal.
  7. Brush rolls with vegetable oil and bake for 8-10 minutes until brown.

 Tip: Fresh pork cuts are safe and most delicious when cooked to an internal temperature of 145F followed by a three-minute rest. These include cuts such as loin filets, boneless loins, sirloin roasts, tenderloins, and pork chops.
