Avocados are kind of the perfect summer food. Not only do they taste delicious and work in lots of different recipes, they also have tons of health benefits. I love adding avocado to salads, making smoothies or just eating one all by itself as a tasty snack. And when it comes to party food there are so many yummy dishes you can make.
So we were all excited when we opened up our surprise box filled with fun avocado goodies to get the party started. Perfect timing too, since we’ve been wanting to have a little in-home party to welcome over a few of our new friends and neighbors. How cute are these purple avocado shirts? Even my husband jumped in on the fun and asked for one!
Thankfully our avocado box came with several recipes to feed our party crowd. They all looked amazing, but I finally decided on three that I knew my crew would love.
A little avocado shopping tip: Fresh Hass avocados are unique from some of the other varieties of avocados because they can change from a dark-green color to a deep purplish almost black hue when ripe. Although skin color can help in the initial visual selection of fresh Hass avocados it is not always the best indicator for ripeness. Ripeness is ultimately determined by consistency. Color can sometimes be misleading as avocado “softening” can occur at a varying rate, independent of the color.
Did you know that avocados contain naturally good monounsaturated fat, good fats that are an important part of a healthy diet. Avocados are a great substitute for foods high in saturated fat. They are also an ideal alternative to dairy products for vegan or vegetarian meals.
Vegan Avocado Ceviche
This recipe is easy to make and so full of flavor! Avocado smoothness combined with the crunchy cauliflower, lime and cilantro. Serve it up with tortilla chips or pita chips.
Chipotle Avocado Stuffed Cherry Tomatoes
Tomatoes are one of my favorite foods and this recipe is the perfect way to make turn them into party food. Creamy avocado and greek yogurt create a delicious filling with a kick of chipotle heat.
Some people are surprised to know that avocados are actually a fruit even though they are low in sugar. They contain less than one gram of sugar per 1-ounce, lower than any other fruit. And even though they may be low in sugar, they are high in nutrients. Avocados contain nearly 20 vitamins, minerals and phytonutrients which make them a “nutrient booster,” helping the body absorb fat-soluble nutrients like alpha- and beta-carotene and lutein.
The avocado ceviche was a big hit and disappeared fast! I had quite a few requests for the recipe and a couple of carnivores who couldn’t believe a vegetarian dish could taste so good!
