In the spring and summer we tend to go towards lighter meals and snacks. Warmer weather means we're outside and the on-the-go a lot more so I'm not cooking as many big meals. I love meals that are tasty and don't take very much prep work. This tomato mozzarella caprese is perfect for when you want something quick and simple or when you need an easy appetizer idea.
I made this the other night before the boys got home from playing ball. On Tuesdays I've been taking a GRIT class that's pretty intense, when I get home I'm just about ravished. So I made myself this Melted Mozzarella Caprese to nibble on while I made dinner. It was delicious and just enough to hold me over till everyone got home and we could enjoy pasta night together. Fresh tomato and basil, melted mozzarella and crunchy whole grain WASA crispbread….yum YUM!

Easy Pasta Dish + Protein

Tomato Mozzarella Caprese Crisps
Let's make these Caprese Crisps. First, slice up a roma tomato. Then slice your fresh mozzarella cheese. Add a leaf of basil to your WASA Crispbread. Layer the tomato and mozzarella on top and drizzle with balsamic glaze.
If you want to try this recipe melted simply top your WASA Crispbread with tomato, add mozzarella cheese on top and bake a few minutes until melted.

Tomato Mozzarella Caprese Crisps Recipe
- WASA Mult-Grain Crispbread
- roma tomato
- fresh basil
- fresh soft mozzarella
- balsamic glaze
- Slice roma tomato and mozzarella into slices
- Layer basil leaf on top of WASA crispbread. Add tomato slice and top with mozzarella slice
- For melted caprese place in oven at 400 degrees and heat till mozzarella melts
- Serve with balsamic glaze
