Mozzarella Caprese is one of my favorite snacks! This recipe is quick and easy to make and tastes so delicious you’ll love every bite. This post is sponsored by Barilla and Acorn Influence. All thoughts and opinions are my own.

In the spring and summer we tend to go towards lighter meals and snacks. Warmer weather means we’re outside and the on-the-go a lot more so I’m not cooking as many big meals. I love meals that are tasty and don’t take very much prep work. This tomato mozzarella caprese is perfect for when you want something quick and simple or when you need an easy appetizer idea.

On Tuesdays I’ve been taking a GRIT class that’s pretty intense, when I get home I’m just about ravished. So I made myself this Melted Mozzarella Caprese to nibble on while I made dinner. It was delicious and just enough to hold me over till everyone got home and we could enjoy pasta night together. Fresh tomato and basil, melted mozzarella and crunchy whole grain WASA crispbread….yum YUM!

WASA Crispbreads are perfect for making a satisfying snack in seconds. They are 100% whole grain and fat free. Top them with a fruit spread, cheese or just a drizzle of honey. There are so many tasty ways you can dress them up.

Easy Pasta Dish + Protein

Pasta is a big favorite in our house so we do pasta night once or twice a week. I picked up Barilla ProteinPLUS Pasta when I was grocery shopping at Walmart. I like that it has 17g of protein per portion all from natural vegetarian ingredients. And it’s a good source of fiber and ALA Omega-3. Add some veggies and Barilla Marinara sauce and you have a delicious, wholesome dinner any day of the week.

Barilla Gluten Free pasta has recently been named one of Parents Magazine’s “Top 25 Allergy Free Foods”
