Our summer weekends center around two simple things: good food and great company! Isn’t that what summer is really all about? Soaking up some sunshine, grillin’ and chillin. Sipping something cold surrounded by people that make you smile. That’s what I love most about summer.
One of my favorite foods to serve up fresh off the grill is sweet, delicious corn on the cob. Corn is in season and easy to find at any farmers market or grocery store. And since you can grill it right in the husk it’s super easy to prepare and enjoy.
I found this great recipe for Grilled Corn with Chipotle Butter on Pints and Plates. I love a refreshing beer with a hint of citrus in the summertime and Leinenkugel’s® Summer Shandy® is one of my favorites. It’s the perfect beverage to compliment the intense flavors of this recipe. The touch of sweetness pairs well with the smoky, chipotle heat.
You’ll need six ears of corn in their husks for this recipe. I used sweet yellow corn and white corn for mine, but you could choose whichever you prefer. Soak corn in husks in water for ten minutes.
Go ahead and preheat your grill to medium-high heat. While the grill is heating up and the corn is soaking you can work on the chipotle butter.
If you like Mexican street-style corn then you’ll love this recipe. The chipotle butter gives it a spicy kick. Throw the butter, chipotle peppers, adobo sauce and salt all in the food processor and pulse till smooth.
The butter is done and now it’s time to get those corn ears on the grill. Five minutes on each side until the husks are charred, then remove from the heat and allow the corn to cool for another five minutes.
Pull back cornhusks and spread chipotle butter over the hot corn. Top with cheese and cilantro and it’s ready to eat.
The cheese gives the corn a little salty flavor while the cilantro adds a fresh taste. I love the bold flavors you pick up in every bite. And the Leinenkugel’s® Summer Shandy® washes it all down with a bright, refreshing finish.
I love that this recipe is quick and easy to make so you don’t have to waste time in the kitchen. Plus, it’s a crowd pleaser so it makes the perfect side dish to pair with burgers, steaks, chicken or fish.

There’s nothing like grilling in the summer time. Some vegetables just taste better on the grill like asparagus and corn on the cob, seriously there is no better way to prepare them. I love summer grilling season, as long as the bugs stay away.
